La parola bign\u00e8 pu\u00f2 identificare infatti due preparazioni molto diverse tra loro. Esiste il bign\u00e8 fritto (caratterizzato da un impasto lievitato a base di farina, latte, burro e uova) che per\u00f2 noi preferiamo far rientrare nella vasta gamma di ricette dell&#8217;universo &#8220;<a href=\"http:\/\/ricettedi.it\/cucina\/2009\/09\/zeppole\/\" title=\"zeppole\" target=\"_blank\">zeppola<\/a>&#8220;. Il bign\u00e8 che vi presentiamo in questa pagina \u00e8 invece un impasto senza lievito, cotto al forno, e da farcire successivamente con una crema a piacere. Il suo nome corretto \u00e8 &#8220;pasta choux&#8221;.<\/p>\n<p>Questa \u00e8 <strong>la ricetta supercollaudata di Elisa. Ecco le dosi della pasta choux:<\/strong><br \/>\n\u2013 farina: 150 g<br \/>\n\u2013 burro: 80 g<br \/>\n\u2013 uova: 4<br \/>\n\u2013 sale: un pizzico<br \/>\n\u2013 acqua: 250 ml<br \/>\n\u2013 zucchero: 1 cucchiaino<\/p>\n<p><strong>Preparazione:<\/strong><\/p>\n<p>per prima cosa sciogliete il burro nell&#8217;acqua con un cucchiaino di zucchero.<\/p>\n<p><a raggiunge il bollore, allontanate il pentolino dai fornelli, aggiungete un pizzico di sale e poi cominciate ad incorporare la farina poco alla volta mescolando energicamente con un cucchiaio di legno \u00e8 sciolta, rimettete il pentolino sul fuoco e continuate la cottura a fiamma dolce. L&#8217;acqua evapora e l&#8217;impasto poco alla volta si addensa. Dopo circa 5 minuti, la pasta choux comincia a prendere forma.
