Togliete alcune delle foglie esterne e tagliate le punte pi\u00f9 dure. Allargate bene le foglie e con le dita cercate di strappare la \u201cpeluria\u201d interna vicina al torsolo. Tagliate i gambi del carciofo fino alla base, e metteteli da parte. Man mano che pulite i carciofi, immergeteli in una casseruola contenente acqua fredda con succo di limone spremuto, perch\u00e9 i carciofi si anneriscono lungo le parti tagliate. <strong>Utilizzate solo la parte del gambo pi\u00f9 vicina al carciofo, la pi\u00f9 tenera e saporita<\/strong>.
