Questa \u00e8 la fase pi\u00f9 importante. Per realizzare un buon impasto vi occorre un po&#8217; di esperienza. Non abbiate paura di sbagliare. Dovete imparare a maneggiare la pasta ed a capire qual \u00e8 la giusta consistenza. <strong>La tecnica corretta \u00e8 questa:<\/strong> mescolate la farina con il sale, poi formate un cratere al centro dove posizionate il lievito di birra. Cominciate a versare l&#8217;acqua tiepida e sciogliete il lievito con le dita. Continuate a versare l&#8217;acqua ed assorbite la farina in modo graduale impastando con una sola mano. Quando tutta la farina \u00e8 stata assorbita, staccatevi l&#8217;impasto dalle dita, aiutandovi con altra farina e continuate ad impastare. Aggiungete l&#8217;olio e lavorate l&#8217;impasto con energia per altri 5 minuti almeno.<\/p>\n<p>Dopo aver creato un bell&#8217;impasto morbido, copritelo con un canovaccio e riponetelo a lievitare in un posto preferibilmente caldo e umido. Dopo 1 ora e mezza l&#8217;impasto raddoppia circa il suo volume <\/p>\n<p><a href=\"https:\/\/i0.wp.com\/ricettedi.it\/cucina\/wp-content\/uploads\/2009\/11\/03_focaccia_ligure.jpg\"><img
