2 rotoli di pasta brisee tonda gi\u00e0 pronta (oppure 2 rotoli di pasta sfoglia)<br \/>\n&#8211; 1 kg di bietoline (pesate pulite)<br \/>\n&#8211; 500 g di ricotta di pecora<br \/>\n&#8211; 7 uova (2 nel ripieno e 5 nella preparazione)<br \/>\n&#8211; 150-200 g di parmigiano<br \/>\n&#8211; odori: maggiorana, prezzemolo, sale e pepe<br \/>\n&#8211; olio extravergine di oliva<\/p>\n<p><strong>Preparazione:<\/strong><\/p>\n<p>Per la pasta, se non volete utilizzare quella &#8220;gi\u00e0 pronta&#8221;, potete utilizzare le ricette presenti nel sito (<strong><em><a href=\"http:\/\/ricettedi.it\/cucina\/2009\/11\/pasta-sfoglia\/\">pasta sfoglia<\/a><\/em><\/strong> o <strong><em><a href=\"http:\/\/ricettedi.it\/cucina\/2009\/11\/pasta-brise\/\">pasta bris\u00e9e<\/a><\/em><\/strong>), oppure potete attenervi alla ricetta ligure integrale che esponiamo di seguito:<\/p>\n<p>Impastate 450 gr di farina con acqua quanto basta (circa 200 ml) ed un pizzico di sale. Quando l&#8217;impasto avr\u00e0 raggiunto la giusta compattezza ed elasticit\u00e0, amalgamate 4 cucchiai di olio extravergine di oliva. Dividete il panetto in 8 parti uguali e stendete in una sfoglia sottilissima ogni singolo panetto fino a raggiungere le dimensioni della teglia pi\u00f9 il bordo. Fate attenzione perch\u00e9 mentre lavorate un pezzettino di impasto, gli altri si seccano, quindi tenete l&#8217;impasto sempre coperto. Appena pronta la prima sfoglia, stendetela nella teglia e ungete con un pennellino la superficie (con il burro o con l&#8217;olio d&#8217;oliva in base al vostro gusto personale&#8230; &#8220;colesterolo permettendo&#8221;). Di seguito tirate le altre sfoglie fino a concludere 5 strati, ungendo sempre con olio o burro tra uno strato e l&#8217;altro. Questa sar\u00e0 la base della Torta Pasqualina, i 3 strati rimanenti li utilizzerete per la copertura<\/p>\n<p>Sistemate per bene il ripieno di bietole e, facendo 5 piccole fossette, sgusciate le
