Questi peperoni (tra i quali citiamo il rinomato Peperone di Senise IGP) sono molto simili ai peperoncini rossi piccanti. Sono per\u00f2 pi\u00f9 grandi e soprattutto pi\u00f9 lunghi. Si acquistano freschi d\u2019estate e si infilano con ago e filo uno ad uno per il picciolo, per essere appesi al sole ad essiccare. Appesi durano tutto l\u2019anno fino all\u2019estate successiva. Aggiungete le fette di salame e fatele scaldare a fiamma dolce. Il salame non deve cuocere, ma deve solo scaldarsi per aromatizzare l&#8217;olio.<\/p>\n<p><a
