Scaldate a fiamma media fino a che tutto il burro non si \u00e8 perfettamente sciolto. Quando l\u2019acqua raggiunge il bollore, allontanate il pentolino dai fornelli, aggiungete un pizzico di sale e poi cominciate ad incorporare la farina poco alla volta mescolando energicamente con un cucchiaio di legno per evitare la formazione di grumi. Quando tutta la farina si \u00e8 sciolta, rimettete il pentolino sul fuoco e continuate la cottura a fiamma dolce. L&#8217;acqua evapora e l&#8217;impasto poco alla volta si addensa. Dopo circa 5 minuti, la pasta choux comincia a prendere forma. Si stacca dalle pareti e rimane quasi tutta attaccata al cucchiaio di legno<\/p>\n<p>Trasferite l&#8217;impasto in una ciotola e cominciate ad incorporare le uova. Aggiuntele all&#8217;impasto tiepido in maniera graduale. Dovete sgusciare un uovo alla volta. Dopo averlo perfettamente incorporato, potete passare al secondo uovo.
