L&#8217;importante \u00e8 seguire un paio di regolette semplici semplici &#8230; ma fondamentali<\/p>\n<p><strong>La 1\u00b0 regola \u00e8<\/strong> che il riso va cotto in anticipo. Raffreddatelo subito e poi conditelo con l&#8217;olio per tenere i chicchi separati. Solo quando \u00e8 freddo (o anche tiepido), amalgamatelo agli altri ingredienti<\/p>\n<p><strong>La seconda regola \u00e8<\/strong> quella dell&#8217;uovo. Per amalgamare bene lo sformato, dovete usare almeno 1 uovo ogni 10 cucchiai di riso.<\/p>\n<p>Se rispettate queste due regole, tutto quello che aggiungete al vostro sformato servir\u00e0 a personalizzarlo e ad arricchirlo. Per creare il vostro sformato, affidatevi quindi al vostro gusto, ed alla vostra disponibilit\u00e0 di ingredienti. <\/p>\n<p>In questa pagina Chef Antony ha preparato uno sformato di riso e zucchine molto semplice. <strong>Una ricetta light, senza soffritti, con le zucchine trifolate a crudo<\/strong>, insaporite con una bella grattugiata di parmigiano e pecorino romano. Al centro, un cuore filante ottenuto con mozzarella a pezzettoni e qualche fettina di scamorza fresca.<\/p>\n<p><strong>Questi sono gli ingredienti<\/strong> (per le dosi vale quanto detto sopra)<\/p>\n<p>&#8211; riso<br \/>\n&#8211; zucchine<br \/>\n&#8211; uova<br \/>\n&#8211; mozzarella<br \/>\n&#8211; scamorza<br \/>\n&#8211; parmigiano<br \/>\n&#8211; pecorino romano<br \/>\n&#8211; olio di oliva<br \/>\n&#8211; un pizzico di sale<\/p>\n<p><strong>Per prima cosa cuocete il riso in abbondante acqua leggermente salata<\/strong>. Quando lo scolate passatelo immediatamente, per qualche secondo, sotto acqua fredda corrente. In questo modo interrompete la cottura e mantenete il chicco bello sodo. Scolateli per bene e poi conditeli con un filo di olio extravergine di oliva per mantenere i chicchi staccati l&#8217;uno dall&#8217;altro.<\/p>\n<p>Dopo aver preparato il riso fate un trito di zucchina. Tagliatela a crudo e tritatela finemente con un tritatutto elettrico.<\/p>\n<p><a
